Description
Juicy black pepper chicken with mushrooms stir-fried in a bold, savory sauce. This easy 30-minute recipe is better than takeout, made with fresh ingredients and perfect for busy weeknights. Serve it over rice or low-carb veggies for a satisfying dinner packed with flavor and ready in no time.
Ingredients
For the Chicken:
1 lb chicken breast or thighs, thinly sliced
1 tbsp soy sauce
1 tsp oyster sauce
1 tsp cornstarch
½ tsp black pepper
½ tsp sesame oil (optional)
For the Stir-Fry:
1 tbsp oil (canola or avocado)
1 cup mushrooms, sliced
1 small onion, sliced
2 cloves garlic, minced
1 tsp fresh ginger, minced
For the Sauce:
1 tbsp soy sauce
1 tbsp oyster sauce
½ tsp sugar (or honey)
¼ cup chicken broth or water
1 tsp cornstarch
½ tsp freshly ground black pepper
¼ tsp dark soy sauce (optional)
Instructions
Marinate chicken in soy sauce, oyster sauce, cornstarch, sesame oil, and black pepper. Let sit for 15 minutes.
Mix sauce ingredients in a small bowl and set aside.
Heat oil in a wok or skillet. Add chicken and stir-fry for 4–5 minutes until browned and nearly cooked. Remove and set aside.
In the same pan, cook mushrooms until browned. Add garlic, ginger, and onions. Stir-fry for 2–3 minutes until fragrant.
Return chicken to the pan. Pour in sauce. Cook everything together for 2–3 minutes until the sauce thickens and coats the chicken and mushrooms.
Serve hot with rice, cauliflower rice, or noodles.
Notes
Use freshly ground black pepper for the best flavor.
Double the sauce if you want extra for rice or noodles.
Add bell peppers, snap peas, or broccoli for more color and texture.
Can be made gluten-free by using tamari and gluten-free oyster sauce.
