Ingredients

Scale

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

For the Pasta & Sauce:

  • 12 ounces pasta (penne, fettuccine, or rigatoni)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • 1 ½ cups mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • ½ cup reserved pasta water
  • 2 tablespoons fresh basil, chopped

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package instructions until al dente.
  3. Reserve ½ cup of pasta water, then drain and set aside.

Step 2: Prepare the Chicken

  1. Season the chicken breasts with Italian seasoning, garlic powder, smoked paprika, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Cook the chicken for 6-7 minutes per side until golden brown and cooked through.
  4. Remove from heat, let it rest for 5 minutes, then slice into strips.

Step 3: Make the Sauce

  1. In the same skillet, melt butter over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Pour in tomato sauce, heavy cream, Italian seasoning, and red pepper flakes (if using). Stir well.
  4. Simmer for 3-4 minutes, then reduce heat to low.

Step 4: Combine Everything

  1. Add shredded mozzarella and Parmesan cheese, stirring constantly until melted.
  2. Toss in the cooked pasta and sliced chicken, mixing well to coat everything in the sauce.
  3. If the sauce is too thick, add a splash of reserved pasta water to reach the desired consistency.
  4. Taste and adjust seasoning if needed.

Step 5: Serve and Garnish

  1. Divide the pasta among serving plates.
  2. Garnish with fresh basil and extra Parmesan.
  3. Serve warm and enjoy!

Notes

  • Pasta Choice: Penne, rigatoni, or fettuccine work best for holding onto the creamy sauce.
  • Lighter Option: Use half-and-half instead of heavy cream for a lighter version.
  • Extra Flavor: Add sun-dried tomatoes or spinach for a fresh twist.

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
