Ingredients
Scale
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
For the Pasta & Sauce:
- 12 ounces pasta (penne, fettuccine, or rigatoni)
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- 1 ½ cups mozzarella cheese, shredded
- ¼ cup Parmesan cheese, grated
- ½ cup reserved pasta water
- 2 tablespoons fresh basil, chopped
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the pasta according to package instructions until al dente.
- Reserve ½ cup of pasta water, then drain and set aside.
Step 2: Prepare the Chicken
- Season the chicken breasts with Italian seasoning, garlic powder, smoked paprika, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Cook the chicken for 6-7 minutes per side until golden brown and cooked through.
- Remove from heat, let it rest for 5 minutes, then slice into strips.
Step 3: Make the Sauce
- In the same skillet, melt butter over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Pour in tomato sauce, heavy cream, Italian seasoning, and red pepper flakes (if using). Stir well.
- Simmer for 3-4 minutes, then reduce heat to low.
Step 4: Combine Everything
- Add shredded mozzarella and Parmesan cheese, stirring constantly until melted.
- Toss in the cooked pasta and sliced chicken, mixing well to coat everything in the sauce.
- If the sauce is too thick, add a splash of reserved pasta water to reach the desired consistency.
- Taste and adjust seasoning if needed.
Step 5: Serve and Garnish
- Divide the pasta among serving plates.
- Garnish with fresh basil and extra Parmesan.
- Serve warm and enjoy!
Notes
- Pasta Choice: Penne, rigatoni, or fettuccine work best for holding onto the creamy sauce.
- Lighter Option: Use half-and-half instead of heavy cream for a lighter version.
- Extra Flavor: Add sun-dried tomatoes or spinach for a fresh twist.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
