Description

These Madeline cookies using cream are soft, buttery, and perfectly moist. This easy French recipe creates light and airy shell-shaped cookies, enhanced with rich cream for a melt-in-your-mouth texture. Perfect with tea, coffee, or as a sweet treat!

Ingredients

Scale
  • 1 cup (120g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 2 large eggs (room temperature)
  • ½ cup (120ml) heavy cream
  • ¼ cup (60g) unsalted butter (melted and slightly cooled)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • Zest of 1 lemon or orange (optional for extra flavor)

Instructions

Step 1: Prepare the Madeleine Pan
1️⃣ Grease the Madeleine pan with melted butter and lightly dust with flour.
2️⃣ Place the pan in the refrigerator while preparing the batter.

Step 2: Whisk Eggs & Sugar
1️⃣ In a large bowl, whisk eggs and sugar for 2-3 minutes until light and fluffy.
2️⃣ Add vanilla extract and citrus zest (if using).

Step 3: Mix Dry Ingredients
1️⃣ In a separate bowl, sift together flour, baking powder, and salt.
2️⃣ Gently fold dry ingredients into the egg mixture.

Step 4: Add Cream & Butter
1️⃣ Slowly mix in the heavy cream to keep the batter smooth.
2️⃣ Gently fold in melted butter until combined.

Step 5: Rest the Batter
1️⃣ Cover the batter with plastic wrap and chill for at least 1 hour (or overnight).
2️⃣ This step enhances flavor and ensures the signature Madeleine hump.

Step 6: Bake the Madeleines
1️⃣ Preheat the oven to 375°F (190°C).
2️⃣ Fill each shell mold ¾ full with batter (do not spread it).
3️⃣ Bake for 10-12 minutes or until golden brown and springy to the touch.
4️⃣ Let them cool in the pan for 2-3 minutes, then transfer to a wire rack.

Step 7: Serve & Enjoy!
1️⃣ Dust with powdered sugar or dip in melted chocolate.
2️⃣ Enjoy with coffee, tea, or a fruit preserve.

Notes

  • Resting the batter is key for achieving the classic hump.
  • Slightly underbaking helps keep them moist longer.
  • Store in an airtight container at room temperature for 1-2 days or refrigerate for up to 1 week.
