Recipe Vegan Oat Cake is a healthy, soft, and naturally sweetened cake made with oats, bananas, and maple syrup. This easy, one-bowl recipe is perfect for breakfast or a guilt-free dessert.
Ingredients
- 2 cups rolled oats (or oat flour)
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon
- ¼ tsp salt
- 1 cup mashed bananas
- ½ cup plant-based milk (almond, oat, or soy)
- ¼ cup maple syrup
- 1 tbsp ground flaxseeds + 3 tbsp water (flax egg)
- 1 tsp vanilla extract
Optional Add-Ins:
- ½ cup chopped nuts (walnuts, almonds, or pecans)
- ¼ cup raisins or chocolate chips
- ¼ cup shredded coconut
Instructions
1️⃣ Preheat the oven to 350°F (175°C) and grease an 8-inch cake pan.
2️⃣ Prepare the flax egg by mixing 1 tbsp ground flaxseeds with 3 tbsp water. Let it sit for 5 minutes.
3️⃣ Blend the oats into flour (if not using pre-made oat flour).
4️⃣ In a large bowl, whisk together oat flour, baking powder, baking soda, cinnamon, and salt.
5️⃣ In a separate bowl, mash the bananas and stir in plant-based milk, maple syrup, flax egg, and vanilla extract.
6️⃣ Combine wet and dry ingredients, stirring gently. Fold in nuts, raisins, or chocolate chips if using.
7️⃣ Pour the batter into the cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
8️⃣ Let cool for 10 minutes, then transfer to a wire rack. Slice and enjoy!
